SIR - In reply to Phil Boase (T&A, November 7) regarding fish fryers making a bomb out of chips, while I agree some may do there are some that don't.

He may know the price of a sack of spuds, but he doesn't seem to realise there are different prices for different qualities.

Also to take into consideration is water to wash them (fish shops are metered), electric to rumble and chip them, plus fat and gas or electric to cook them.

On top of all this there is VAT to be added.

My son runs a fish and chip shop and he only buys the best possible potatoes, so has to pay a higher price.

He does a full portion or a half portion. A good percentage of his customers buy the half portion because they say they can't manage to eat a full portion as there are too many chips.

His customers feel that at £2.60 for fish and a full portion of chips, he is giving good value for money.

Mr Boase should not tar everybody with the same brush.
