Orange and lemon peel isn't the easiest waste to compost as the worms and bugs take a long time to break it down. Instead, why not use the chemicals that they find so unappetising around the home? You can remove the zest and store in the fridge or freezer. Use for flavouring marinades, oils, pastry, cream, tea, salads or leave in the fridge to freshen it up. Alternatively put the peel straight on to the hot surface of a stove or steep it in vinegar to act as an air freshener, or use the skins in home-made colognes and perfumes.
