LISHMAN’S of Ilkley has been awarded an artisan food award for its Yorkshire Pork and Fennel Salami by food and drink journalist and broadcaster Nigel Barden and premium cooking appliance manufacturer Britannia.

The multi-award-winning butcher and charcutier is the hard work of David Lishman. Hailing from an agricultural background, David now runs the business with his daughter Emma.

Nigel Barden said: “Lishman’s of Ilkley, our Gold Medal champion, provides a beautiful melt in the mouth salami, which underpins the addition of fennel and black pepper. It leaves a long sweet finish with a marvellous lingering feeling of contentment. Perfect when paired with a Yorkshire ale, or a fruitily acidic apple juice.

‘“Their selection of meat are all examples of British charcuterie at its finest. No surprise that David Lishman is also Chair of the Q Guild of Butchers, representing some of the greatest purveyors of meat in the UK. This man is at the top of his butchery game.”

The Britannia Artisan Food Collection launched at the end of last year in Wales. The public was invited to nominate artisan food producers from across the country.

A shortlist was chosen by Nigel Barden and awarded a place on Britannia’s Artisan Food Collection map, before a top three were chosen and a winner awarded.

Cunningham Butchers, based in Northern Ireland, took the first joint-silver place for its Cowboy Steak. Russian Pies, based in Sheffield, took the other silver accolade for its Russian Pie ‘Piewich’.

St. Andrews Cheese, on the Fife coast, took the first bronze place for its crumbly Anster Cheese. The second bronze has been awarded to Nottingham based Dilly Dilly Gin for its Lydia Lydia Gin.
