FIRST time mum Nabeelah Kathrada from Bradford is inspiring parents to cook up creative dishes with an Instagram following of more than 8,000 people.

Nabeelah will be sharing her recipe of the week with the T&A to help anyone struggling with confidence and food ideas during the weaning process.

And the best part is this recipe is great for both babies and adults alike. 

Nabeelah enjoys her pancakes with syrup for added sweetness!

Blueberry and banana pancakes by Nabeelah Kathrada

These pancakes are a total winner in our home and I love them for so many reasons – they are quick and easy to whip up, nutritious and suitable from 6m +. Not to mention they taste delicious!

The ingredients include staple food items like banana, oats, eggs, blueberries and a dash of cinnamon. They are really soft and perfect for baby led weaning.

Although any kind of banana will work, it is better to use a very ripe banana as they taste sweeter, making the pancakes taste amazing not only for little ones but older kids and adults too!

What’s great with this recipe is that the ingredients can be swapped around depending on what you have in. Change the blueberries for raspberries or leave them out altogether – simple banana pancakes are just as yummy.

The pancakes are best served warm with a dollop of yoghurt! You can keep these in the fridge for up to 48 hours or freeze up to 3 months.

Recipe:

Ingredients
1 ripe banana
1 egg
1 tsp ground cinnamon
1/2 cup rolled oats- you can add more or less depending on thickness of the batter
Handful of sliced blueberries

Method
Mash the banana with a fork. In a separate bowl, add the egg and banana and whisk well. Next, add the oats and cinnamon and mix until well combined. Lastly, add the blueberries and give this a stir until the berries are evenly distributed.
Take a little butter or fry light and add on a low to medium heat frying pan. Scoop one tablespoon of the mixture onto the pan and fry for a couple minutes or until the pancakes start to brown on each side. Depending on the size of your pan, you should be able to cook four small pancakes in one go – the ingredients serve 8 so fry them in batches.

Wait for them to cool down before serving.
